Every year, I make a huge batch of Raw Cranberry Relish, and there are no unwanted leftovers. But I often do want to make some cooked cranberry sauce too, and then I need to use up the rest afterwards. This stunning salad dressing takes five minutes to whip up.

It will be perfect for dressing salads, and particularly good if those salads include leftover turkey! Cranberry vinaigrette dressing gets bonus points for being such a gorgeous color, which feels super festive. It’s creamy, tangy and a little sweet– just perfect when you’re not quite done enjoying holiday flavors.

Ingredients
- 1 cup Cranberry Sauce
- 1/2 cup Extra Virgin Olive Oil
- 1/4 cup Apple Cider Vinegar, Champagne Vinegar, or Sherry Vinegar
- 1/4 cup water
- 1 1/2 teaspoons salt
- 1 teaspoon mustard (dijon or stone ground are great)
Instructions
Just put everything in the blender and blend until smooth! Taste and adjust to your taste– does it need a little more salt, mustard, or vinegar?
Store in a glass bottle. It should last a week or so in the fridge.
